Wish I Was Your Pound Cake (Butter Cake)
Everything is better with butter!

Those lyrics couldn’t describe this cake any better. Not quite as dense as a pound cake, but still hearty enough round out those hips! Johnnie Ruth (my late grandmother) used to say, “once on the lips, forever on the hips”. While I could never give away her exact recipe, this version of my family’s favorite will please any poundcake lover.
Why modify a family classic? Because… I Don’t Like Poundcake! There I said it! Phew! Got that off my chest!
Ingredients
3 sticks softened butter
2 cups sugar
5 eggs
3 cups all purpose flour (sifted)
½ teaspoon salt
1 tsp baking powder
1 cup whole milk
2 tsp vanilla extract
1 tsp vanilla beans (optional)
½ package vanilla instant pudding

Parchment Paper
Preparation
1. Preheat oven to 300
2. Make sure all dairy is at room temperature before preparing this batter. Using hand mixer or stand mixer, on low/medium speed, mix butter and sugar until mixture is creamy and you can no longer see granuals of sugar.
3. One at a time, add eggs. Making sure each egg is completely mixed in before adding the next. Add vanilla extract and beans.
4. In a separate bowl, wisk together all dry ingredients.
5. Alternating dry ingredients and milk, add to the batter while continually mixing, making sure you end with flour mixture. Keep mixer on low/medium speed. Once last of dry ingredients is mixed in, STOP mixing. Over mixing will make your cake tough.
6.If using a bunt pan, this recipe will make two cakes. My grandmother used one large angel food pan which held all of the batter. If using the angel food pan, cut parchment paper in doughnot shape to line the bottom of the pan (you’ll thank me later for this extra step). Generiously spray pan with bakers joy.
7. Fill pan(s) ¾ way with batter. Make sure rack in is the center of the oven and place cakes in the oven.
8. Bake cake(s) for 1hr to 1hr 30min depending on your oven. Using toothpick, check cake(s) at the 55min mark. When cake is done, toothpick will come out completely clean.
9. Once done, remove cake from oven and away from heat. Do not sit on stovetop to cool. Let cool for 30-40 min before removing from pan.
