
Spicy Broccolini Beef
Cure for the weeknight rut.
Anyone feel like they get into a weeknight dinner rotation? Then you get sick of it and end up ordering out, and most of the time its crap right? Don’t get me wrong. I LOVE pizza. But I also know that we tend to start eating crap when we’ve run out of ideas for quick dinners.
Ive taken advantage of the shelter in place order in my city by working on some one pan quick family dinners. I know I added ribeye as the cut of meat, but that’s just my preference. you can use something leaner, or whatever is in your budget. As long as you slice it super thin and across the grain, you can’t go wrong with this recipe. if you can’t find broccolini, go ahead and replace it with broccoli florets, but just increase to six cups. Broccoli Rabe is even a suitable replacement if you don’t mind the slight bitterness.
This recipe very much is for my keto, paleo, and whole 30 peeps out there. It is times like these where staying on track can get difficult, and fresh recipes that don’t involve special market trips, and foreign ingredients can truly help. I understand the struggle. I’m used to going to the market several times per week, but I’ve limited myself to once a week during this shelter in place order. Some days I feel like an episode of Chopped in my own kitchen, just trying to use what I have on hand and make something fabulous.
If you don’t like too much spice, omit the red pepper flakes. This a complete one pan meal with 100% clean ingredients. This is definitely going into the rotation in this house! I hope you enjoy as much as we did!

Ingredients Prep:10min Cook:15min Total:25min K W30 P GF NF
1 1/2 lbs steak (NY strip used above) thinly sliced across the grain
4tbs EVOO
2tsp arrowroot starch
1 1/2 tsp sea salt
1tsp ground black pepper
1/4 cup thinly sliced shallots
1 c thinly sliced red bell peppers
1/2c pepperoncini (jarred)
1/2tbs crushed red pepper flakes
1tbs minced garlic
2tbs brine from pepperonicini jar
2tbs fresh oregano
4c chopped broccolini
Instructions
In a medium bowl, add sliced steak, 1tsp of EVOO, arrowroot starch, salt and black pepper. mix together throughly and set aside
heat a large sautee pan or cast iorn skillet over medium/high heat. add 1tbs of olive oil. add the steak in small batches in pan, making sure pieces aren’t crowed. cook on one side for 2min. turn over and cook for an additional 30 secs. transfer steak to a bowl or plate and set aside.
do not wipe out the pan. reduce heat to medium low, and add remaining oil.add peppers and shallots. cook down until the peppers begin to soften then add garlic and red pepper flakes. stir continuously for 1min, not allowing ingredients to stick.
add brine from jar and beef stock. stir, clearing the fond from the pan.
add chopped broccolini and stir mixing all ingredients together. Cook for 2min or until borccolini has softened.
return Beef to pan, including all juices that may have collected in the bowl or on the plate.
Stir to combine. Turn off heat and serve!
